Before you begin
Please read and acknowledge the Harmonie German Club Employee Handbook before accessing your training.

Dress code: uniform shirt provided by the club, black pants, enclosed shoes, hair tied if working the bar.

Cash handling: never remove cash from the till without manager instruction. All discrepancies reported immediately.
·
Drugs and alcohol: zero tolerance for illicit drugs on the premises. No working under the influence of alcohol.
·
Bullying and harassment: any form of bullying or harassment will result in disciplinary action up to termination.

German Bier Styles
Helles / Pilsnerlight, crisp, clean
Best for guests who usually drink lager. The bridge into German bier.
Weizenbierwheat, cloudy, banana & clove
For guests wanting something different.
Pour with the yeast swirl
Märzenamber, malty, slightly sweet
Pork knuckle pairing. The Oktoberfest bier.
Dunkeldark lager, roasted malt, smooth
For guests who want something dark and rich.

- Takes 4.5 hours to prepare. Not oversupplied.
- Guests must book ahead to guarantee one. If not booked, check with the kitchen.
- Served with mashed potato, red cabbage, sauerkraut, fried onions, haus gravy and apple sauce.
- GFO available. Never promise one without checking first.

- Includes 2 × 0.5L steins of German bier.
- Pork knuckle, German wurst, leberkase, smoked pork loin, pork schnitzel, pork belly.
- The best upsell for a group wanting the full experience.
Munich Man's Feast
$40 members · $44 non-members
- Pork schnitzel, German wurst, kassler, leberkase, frikadellen.
- Fried onions, potato salad, sauerkraut, speck and peas, gravy and German mustard.
- Best tasting plate for guests wanting to try multiple German dishes.

- Chicken, pork and veal schnitzel together.
- Served with mash, sauerkraut and two serves of haus gravy.

Fully plant-based. Confirm with chef for coeliac guests. Knuckles is not allergen-free.
Pouring Guide
Weizen Pour
Use a clean, cold Weizen glass. Tilt and pour slowly to 80%, leave 20% yeast in bottle, swirl to rouse, pour cloudy finish on top.
The cloudy finish is correct. It is not a mistake.
Stein Pour
Slow and angled, with enough head to look authentic and not so much that the guest is paying for foam. Consistency matters on big nights.
German Lagers4–6°C
Never serve a warm bier. If the glass is not cold, get a cold one.
